For all you foodies out there, all of you who enjoy salads, and everyone else! There are so many ingredients to choose from, so many salads you could put together, why hover around the same one? Try this recipe to mix it up!
2lbs Sweet Potatoes, peeled and cubed
2tbsp Olive Oil, divided
1/4tsp Salt, plus a dash
1/2tsp Freshly Ground Pepper
1(10oz) Bag of Baby Spinach, washed
1/4cup Dried Cranberries
1/4cup Chopped Pecans, toasted
1/4cup Crumbled Goat Cheese
(Makes 6 servings.)
Sweet Potato Spinach Salad with Cranberries, Pecans, and Goat Cheese:
First, preheat the oven to 450 degrees Fahrenheit. Then, in a large bowl, toss sweet potato cubes with 1tbsp of olive oil, salt and pepper. Place sweet potatoes on a baking sheet and roast for 20 minutes. Flip potato pieces over and add onion to the pan. Roast for 20 to 25 more minutes or until vegetables are golden and tender. Set this aside to cool to room temperature.
After that, make the vinaigrette! Whisk vinegar with remaining olive oil, the mustard and a dash of salt, and pepper to taste. Add this dressing to the spinach and toss to coat the leaves. Divide spinach salad among six plates, top with roasted sweet potatoes, cranberries, and pecans. Garnish with goat cheese crumbles.
